Elimination diets, increasing scrutiny over the dairy industry and environmental concerns have all contributed to a monumental shift away from dairy. While some dairies have folded under the change in consumer demand, Henry Schwartz made the bold decision to close the doors to his family's 95-year-old dairy and shift to completely plant-based alternatives.
Many dairy manufacturers have added non-dairy products to their portfolios, in order to keep up with consumer demand for plant-based options. However, that doesn’t mean dairy should be discounted.
The market for dairy and dairy alternative beverages will reach a projected $28 billion by 2021, according to market research firm Packaged Facts in the new report, Dairy and Dairy Alternative Beverage Trends in the U.S., 4th Edition. Spurring the segment's growth will be plant-based dairy alternatives, which are expected to come to represent 40% of the combined total of dairy and dairy alternative beverages.
